This device is intended for determination of moisture content and automatic calculation of content of fat and protein only in CRUDE meat and a bird (i.e. not passed heat treatment and without addition of salt, spices and other ingradiyent). It can be used for entrance control of crude meat (beef, pork) and birds (chicken, a turkey), and also for control of process of mixing of components on meat-processing plants. Unlike traditional methods and the PATCH OF LIGHT spectroscopy, definition is carried out within 5 minutes without use of solvents and creation of calibrations.
Definition of moisture is carried out according to the AOAC 985.14 method on loss of weight when drying. Then on a calibration curve which is put in memory of the device, the content of fat and protein is calculated. The received results of definition of moisture and fat correspond to the results received by traditional methods (thermogravitation measurements and an extraction method).
